Mellow Mornings: CBD-Infused Banana Pancake Recipe
In a mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt.
In a separate bowl, mash the ripe banana until smooth. Add the milk, egg, and CBD-infused coconut oil or CBD oil, and whisk until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
Heat a skillet or griddle over medium heat and lightly grease with cooking spray or oil.
Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface of the pancakes and the edges look set, about 2-3 minutes.
Carefully flip the pancakes and cook for an additional 1-2 minutes, until golden brown and cooked through.
Repeat with the remaining batter, greasing the skillet as needed between batches.
Serve the CBD-Infused Banana Pancakes warm, topped with additional sliced bananas, maple syrup, or your favorite toppings.
